What is the difference between Process Studio 6.0.0 and 6.1.0? Should I upgrade now or can I defer it?

One major enhancement in Process Studio 6.1.0 onwards is the Process Studio auto-upgrade feature. Hence, there is no need for end-users to set up a new Process Studio distribution. The System Administrator can upload it one on the server. It will be automatically upgraded for users when they connect, sync or check for updates. This increases the efficiency of an upgrade!
Hence I recommend you upgrade to 6.1.0, and 6.1.0 onwards you will have an in-place upgrade.
